Veggie and Tofu Stir-Fry with wheat Chinese noodles

i cant wait for the weekend..
In my bid to eat healthy i always try out different meal and recipes i stumble across that is readily available to me .
I have been seeing people eat Tofu but i never tried it out so yesterday after work i visited an Indian shop and got a few to try
i made a very healthy stir fry with olive oil and ate it with Chinese noodles.
i found out a cup of Chinese noodle is 192 calories which is not bad at all
INGREDIENTS
1 tbsp fresh ginger, grated or minced
2block firm or extra-firm tofu, well pressed and cut into 1 inch cubes
2 tbsp vegetable or olive oil
4 carrots,chopped
1 onion, chopped
1 bell pepper, any color, sliced
1red onion , sliced
3 hard tomato and pepper
spring Onion chopped
Chinese noodles
3 medium sausages chopped
Green pea chopped
PREPARATION
heat your pan on a medium heat add olive oil
when its heated add your tomato ,pepper,carrot and green pea (i add harder veggies first)
add your Maggi, ginger ,curry and oregano and other spices as you choose
add the sliced tofu ad let it absorb the yummy seasoning
after 10mins add other vegetables
reduce the fire and let it cook for another 10mins
your sauce is ready .
i just boiled the Chinese noodle for 10-15 minutes in hot water
Tastes heavenly
